Yep, like every parent/day camp provider I've got kids who love to move the desktop icons all around and even rename them.

It very much depends on how computer savvy your children are. If they are more computer savvy than you there is not a lot you can do that they won't be able to easily defeat.
The best solution might be to ask them to not to alter things….
You might try this which will remove all icons from the desktop just to see how savvy they are,
1 Right click on a blank area of desktop
2 Click on Arrange Icons by
3 In the drop down box clear the tick/checkmark to the left of "Show Desktop Icons"
4 Wait about 30 seconds and all Icons will disappear
5 The process can be easily undone by reversing the above.
If they wail and then ask you to put things back then there is hope yet!! however if you just find that your machine has been reset then it spells trouble and you will need to be able to:
1 Master the Registry and how to safely make amendments and resrtict certain actions
2 Create yourself a named administrator account, rename the main Administrator account and create a strong password.
3 Delete all other accounts
4 Set up limited accounts for the children
5 Learn about NTFS file permissions and how to set them
6 Set up a strong BIOS password
etc etc
The sad fact is however if they have physical access to the machine practically any protection can be overcome, if they have the knowledge (or the contacts to help them!)
You can buy software that will help or even only let them loose on Virtual Machines that upon switching off "forget" everthing that has gone on before and revert to the standard set up.
The learning curve for setting up Virtual Machines is likely to be fairly steep so its not necessarily for the faint hearted.
I still thing its best to ask them nicely not to alter things….
